After spending four years working seasonal high-end hospitality jobs and a year living and working in New Zealand. It was time to come home and spend some time with my family. I found myself working in a start-up café in my home town and decided to take note of all the learning curves they were making. I started to document what I would do if I was to open my own coffee shop.
That document slowly got bigger and I found myself looking at properties in different Lancashire towns. It was never supposed to happen this quickly but when I found 18 Brock Street, I fell in love with the shop front and light airy space. I could instantly picture what it would look like! Jump forward 5 months, we have the keys and my amazingly skilled Dad is busy transforming an empty shell into the beautiful shop we have today!
A lot of the inspiration came from my time working and travelling in New Zealand. I worked in two sister cafes on the North Island. They're probably the best places I've ever worked. Independent cafés rule the high streets in New Zealand serving up fresh seasonal local produce and it’s something that the UK should have more of!
